Summary: My favorite raw food "uncook" book
Comment: Loaded with creative recipes accompanied by full-size colour photos. Many recipes require a dehydrator or a high-speed blender, but are easy to make for raw-food enthusiasts. Suitable for daily food preparation as well as for dinner parties. The book has a hard cover and a beautiful lay-out. CON: In the body-centered lifestyle tradition, there are many photos of the author in all kinds of poses and settings, including in women's clothes and meditating in leather pants.

Summary: Glad I borrowed this from the library rather than buying it
Comment: I consider myself a very open minded eater so I was very curious about the raw movement and including more uncooked foods in my diet. Based on the reviews here of the book and Brotman's restaurant this book seemed like the perfect introduction to raw foods. Unfortunately my experience with this book didn't live up to my expectations.
I had a couple major issues with this book. First, the titles in my opinion were quite misleading. He would refer to something as nachos or french fries, for example, when it was quite clear from the ingredients would taste NOTHING like what the title would suggest. It also seemed like the cookbook was full of vegan, raw versions of the most decidedly un-vegan and raw things. To me this was disappointing because for me the most delicious vegan recipes I have tried are those that don't try to imitate meat or dairy but that are genuinely good in their own right. There are so many flavorful vegetables, fruits, and grains that to me I don't think you have to make a vegan, raw version of nachos in order to win people over to raw food. I can see where after you've given up all cooked un-vegan foods you would want an acceptable substitute of these foods, but it's almost insulting that Brotman thinks the substitutions he's suggested will fool anyone.
The second problem I had was with the flavor and texture of the dishes I've tried, among them the banana chips and flax seed crackers. The former never reached the "crispy" texture Brotman said they would after 6 hours in a dehydrator. They were really more tacky/chewy. This isn't a bad thing, but I find more precise descriptions to be helpful in determining when something is done. I left them in the dehydrator even longer than recommended and they still never achieved what he suggested they would. The crackers on the other hand were just unpalatable. The flavors just tasted muddy and unappealing despite using very fresh ingredients. I rarely waste food and generally like things that taste healthy, but I actually had to throw these out. Given that 12 crackers contains 2 cups of flax seeds it seemed like WAY too many calories to be worth it for something I didn't enjoy. I was also surprised with this recipe that he didn't call for ground flax seeds rather than whole since everything I have read suggests that the nutrients in ground seeds are more easily absorbed. I tried these both with ground and whole seeds and neither version was particularly tasty.
Overall I was really disapointed with this book. I was hoping to have the great results that others mentioned, but unfortunately that was not my experience. I don't mind putting extra effort in and in fact, did not find the recipes I made overly taxing, but want something delicious to result from my effort. I've heard great things about Ani's Raw Food Kitchen: Easy, Delectable Living Foods Recipes so I am planning to try that next in hope it will give me the healthy and delicious recipes I crave.

Comment: These are some of the best tasting raw recipes I've encountered. I have several raw "cookbooks." and these are the tastiest recipes as a whole.

They are not quick, or inexpensive, but for someone whose health thrives on raw and loves food, they are necessary.

Comment: Haha... okay... some of these low rating reviews are on point... a future edited version would benefit from these sections... but for a more-or-less groundbreaking work-- it *was* one of the first, and certainly the first of its kind (loud, colorful, exciting), raw foods cookbooks, it deserves credit as a classic. And like all the raw cookbooks, there are plenty of good *ideas* in here, even if you're not a "raw foodist."
Hey... my *Mom* opened it up and was drawn in... don't diss it too hard...
