Customer Rating:      Summary: Perhaps my absolute favorite cookbook Comment: I belong to a CSA, so I get a weekly box of vegetables for 20 weeks of the year. Whenever I want to try something new or add zing to a vegetable, one of the first places I turn is Madhur Jaffrey's World Vegetarian. I've found dozens of keepers in this cookbook - dishes I've never really encountered elsewhere, but that intrigue my tastebuds and stretch my horizons. For example, she has a "pumpkin pie" recipe from Greece (p 293) - think spanakopita (spinach pie), not Thanksgiving custard concoctions - and it never ceases to amaze people I make it for. I use 2 to 4 recipes per week from this cookbook during the height of CSA season. I love it so much, I joke that I should start a fan club. :^)
If you belong to a CSA, get this in combo with From Asparagus to Zucchini (which is strong on basic treatments for each veggie) and you'll be golden. As others have pointed out, it is organized largely by primary ingredient, not by cuisine (Indian, Greek, Spanish, etc) or spot on the menu (appetizer, soup, main dish). But if your goal is to find ways to creatively and deliciously use up ingredients you have in the kitchen, you owe it to yourself to try this cookbook.
Customer Rating:      Summary: Best cookbook out there! Comment: This book is great! I am not a vegetarian, but love to eat most of my meals consisting of legumes and veggies. This book really fits the bill! I love how economical most of these recipes are. I took a trip to my local farmers market and bought several pounds of the beans, all of the recommended spices, and veggies all for under 75 dollars. I have a pantry full of items that I can use with these recipes.
Not only is the book practical and economical, but is full of information and provides a great foundation for how to cook, not just how to follow a recipe. It is like an encyclopedia in that you can look up the ingredient and find all you need to know about it and great recipes to follow it. Great find! I don't think there is another book out there of this caliber. YOU MUST GET THIS BOOK!
Customer Rating:      Summary: Great World Cuisine, even if not vegetarian Comment: I found this book by accident many years ago. I was the head chef for a small organic cafe and we had a large (I won't mention the name) retail bookstore next door I turned to when I had the occasional mental block on what to come up with for a daily special. I kept returning to this volume over and over, until I bought it. For those that know me and my professional culinary career, know that I got serious about cooking for others when I was living in Thailand and landed a job at a small guest house and cooking for monks at a nearby forest monastery. I was able to parley this experience and use it to work and travel cheaply throughout Asia and Latin America. Jaffrey's recipes are authentic (with a few vegetarian adaptations) and broadly cover the globe. The only drawback here is that it is a strict vegetarian book, and she does not touch on many of the world's cuisines I savor like seafood, Korean BBQ; North African tagines; or Caribbean essentials like jerk chicken, oxtail, or curry goat. That said, I still recommend this book for its breadth and ability to cover so many cultural world classics in one volume.
Customer Rating:      Summary: My Favorite Cookbook Comment: This is my favorite cookbook ever. It not only taught me how to make delicious food, but it made me into a better cook. Jaffrey's recipies are meticulous and following them exactly will consistently produce amazing results. This is the first time I've made any ethnic food that tastes at as flavorful and delicious as what I would get in a high quality restaurant. I, and my friends, love and depend on Madhur.
Customer Rating:      Summary: Scrumptious! Comment: World vegetarian recipes? Yes, but with a definite preference for West Indian and North African. This is a superbly written source book for Ethnic vegetarian dishes. Items needed for each recipe are clearly cited. Directions are simple and directly stated. Brief information about what gives each Ethnic food its distinctive flavor makes for good reading. The results of even an inexperienced cook are scrumptious.
