Summary: An excellent book that got me started in cooking better
Comment: I've used this book for three years and still refer to it often. When I bought this book, my cooking was just so-so. I would whip up a meal like it was a duty. Not much thought and love went into it.

This book shows me a whole new world in cooking. I learn to use different ingredients and understand how different vegetables go together. Before, my cooking style was strictly Chinese with lots of chopping. Through experimenting with numerous recipes from the book, I learn how to use spices such as rosemary, turmeric, coriander, and cumin, and have been including different kinds of cheese in my diet.

I'm not a vegetarian and have at times substituted certain vegetables with meat, for instance replacing button mushrooms with shrimps. I highly recommend this book for anyone who wishes to expand his/her world of cooking.

Summary: I love this cookbook!
Comment: I've had this cookbook for three or four years now and I still find new and wonderful recipes to try. I have over a dozen favorites, like the Garlic, Chickpea and Spinach Soup, or Summer Tomato Pasta, or the Layered Polenta Bake, etc. etc. The deserts always turn out fantastic as well. I appreciate that there is a good balance between quick and easy recipes as well as more involved ones. The extra information at the beginning of the book and at the end of each recipe is great for those trying to maintain a healthy diet. As a result, I often bring this book to the grocery store or Farmers Market for inspiration. I think it's an all around great cookbook for vegetarians and non-vegetarians alike.

Summary: If I could only have 1 cookbook it would be this one
Comment: I was surprised just what a gem of a cookbook this was when I was given this cookbook by a non-vegetarian. I find the recipes to be simple to prepare and most, if not all, ingredients can be found at home or easy enough to get in a local grocery store. I have not made a bad recipe yet from this book and the pictures for every dish are greatly appreciated! I also enjoy the front of the book that covers the basic parts of a vegetarian diet (with more pictures) and explains the nutritutional aspects.

I have a mother with cancer who I am encouraging to move towards a vegetarian diet. I'll be buying this book for her as I find it is a great introduction to the nutritional benefits and also pleasures of a vegetarian diet.

Again, if I could only have 1 cook book on my shelf this would be the one!
