In this first English-language book of Nicaraguan cooking (and indeed, the only one available in any language), Trudy Espinoza-Abrams has dug deep into her childhood in Granada, Nicaragua and sifted through the countless hours spent in her grandmother's kitchen and her aunt's restaurant to come up with a comprehensive guide to Nicaraguan cooking, recipes, ingredients, and food preparation techniques that is both easy to follow and reliably produces excellent and delicious results, even for inexperienced cooks. The book contains many recipes, divided into sections on Breakfast, Salads, Appetizers, Soups, Main Dishes, Side Dishes, Vegetables, Sauces, Desserts, and Drinks. Included are all the famous dishes of Nicaragua, such as Sopa de Carne (Beef Soup), Vaho (Steamed Vegetables with Beef), Plato de Tortuga (Turtle Stew), Nacatamal (Corn & Pork Tamale), Vigorón (Yucca with Pork), Gallo Pinto (Red Beans & Rice), Buñuelos (Cassava Patties with Syrup), Sopa Borracha (Drunken Soup), and many dozens of other traditional Nicaraguan dishes eaten daily in thousands of homes throughout the country. A Glossary of the Spanish-language food terms used in the book is included, as well as a section of food preparation tips. In addition, sprinkled throughout the book are Ms. Espinoza-Abrams' recollections of her grandmother and early life in Nicaragua. Ms. Espinoza-Abrams is already an accomplished writer, having authored the popular Medical Spanish Made Ridiculously Simple (MedMaster, 1992), now in its second edition after having sold over 10,000 copies.

Customer Rating:      Summary: Not what I expected Comment: I expected better. The author's use of serrano peppers, for example, is puzzling. I've eaten enough Nicaraguan food (prepared by family, friends, and restaurants) to know that it is not typically hot or spicy. In the recipe for homemade chorizo, the author calls for serrano pepper, while other Nicaraguan chorizo recipes do not. Her recipe for Vigoron also calls for peppers, while other Nicaraguan Vigoron recipes do not. After purchasing this book, I decided to ask my Nicaraguan husband to buy a real Nicaraguan cookbook (50 Anos en la Cocina) for me when he took a trip to Nicaragua last summer. Personally, I find it much easier to translate the recipes into English (fortunately I'm bilingual) and ask my Nicaraguan mother-in-law for advice. I do, however, applaud the author's effort to translate Nicaraguan recipes into English. For this I give the book a 4-star rating.

My grandmother also cooked many of the meals featured in this cook book but unfortunately she passed away before I was able to get the recipies from her. Through this wonderful cook book I have been able to share so many happy memories of my grandmother's cooking with my own children.
Customer Rating:      Summary: Authentic and delicious! Comment: After reviewing the recipes and trying them out, I just can't tell how delicious the meals we've had were! Some things were new and some things I grew up with. My grandmother is at an age where she can't remember so this book is key to keeping the traditional meals in our family. Thank you to Trudy Espinoza! for writing this book. I will treasure it! Easy to follow and I would recommend to everyone!
Customer Rating:      Summary: a "must-have" cookbook Comment: what a wonderful cookbook!true, authentic nicaraguan recipes from the simple drinks to favorites such as nacatamal. just about everything in nicaraguan cuisine is in here--breakfasts, appetizers, soups, stews, side dishes & desserts.the recipes are layed out step by step, & very easy to follow. also, a very helpful glossary, & tip section. most complete selection of nicaraguan recipes i've ever found
Customer Rating:      Summary: What delicious buñuelos, and so easy to make! Comment: This excellent little volume is a welcome addition to the Central American cooking scene because it's the first of its kind and has such fool-proof recipes. I had no trouble at all in preparing buñuelos and other desserts unique to Nicaraguan coking, not to mention the great main courses such as vaho (steamed vegetables with beef) and the classical yucca and pork-skin appetizer, vigóron. Highly recommended!
