Comment: Finally I can have great tasting bread again!
I just received my book this afternoon and made the Basic sandwich bread .
When done it looked like wheat bread all high and with a perfect crust.
When I cut off a slice while it was still hot and tasted it I couldn't believe how delicious it was.
The texture was just like fresh home made white (wheat) bread that I use to make all the time.
My husband who looks pityingly at me when ever I have to eat gluten free bread,
thought I made him a loaf of wheat bread and grabbed a slice and said it was as good as usual and that says a lot.
Yes the book does give instructions how to use the recipes on the
Zojirushi BBCC-X20 Home Bakery Supreme bread machine
but for me that was a bonus because that is the bread machine I own.
The instructions are clear and simple. I am so glad I found this book
Cannot wait to try all the recipes in this book.

Summary: These Breads rival any gluten-free ever. . .
Comment: After much reading and research, I ordered the Zojirushi bread machine(have their rice cooker/love it) and AnnaLise Roberts "Gluten-Free Baking Classics for the Bread Machine" book. Her instructions on how to program the machine are very easy and only take a few minutes. I have made the sandwich bread with buttermilk and the multi-grain artisan bread with pecans and sesame seeds many times. These two breads are delicious and always come out so perfect that I've yet to try the other recipes. The flavor of the multi-grain artisan recipe can be changed instantly by using just 1/3 cup of flour such as teff(my favorite) or any of the other whole grain flours available. I always try to invest in the best technology available because I want my appliances to last for many years and I need them to be easy to operate and reliable. Honestly, this is the only bread machine and recipe book you will ever need to make the best gluten-free breads on earth. Five Stars for both!!!

Summary: Big let down! :-(
Comment: I bought a Zojirushi bread machine a few months ago (in the hope of finally being able to make decent tasting gluten free bread), so I bought this book to go along with it. This wasn't my 1st bread machine nor my 1st book about gluten free bread, I had made gluten free bread in the past that was ok but thought this would make a big difference. I was very excited to try it and had high hopes for this new book, but it was a big disappoinment! :-(

I really wish previous reviewers (at the time of my purchase) had shared this major bit of information: ALL the recipes are based on ONE and only flour mix.
This book has a "look inside" feature on amazon, and you can see she uses a flour mix called "flour mix A". This had me wrongly assuming there was a flour mix B and a flour mix C etc... Well there isn't. :-(
So if you don't like the taste of flour mix A (Millet flour + Sorghum flour + cornstarch + potato starch + tapioca starch) or if it doesn't work for you, then this book is pretty much useless!

I had several issues with the 3 recipes (with and without eggs) I tried (several time each of them):
* The taste was bad, very bitter, sometimes to the point of being inedible, and with a rather "yeasty" taste.
* My loaf was quite dense and didn't rise appropriately and sometimes collapsed in the middle. I tried all the suggestions from the Troubleshooting page with no improvement whatsoever! :-(

I waited a while before posting my review because I thought it had to be me doing something wrong and I didn't want to give an undeserved bad review, so I tried the recipes again and again (1st following them to a T, then trying the suggestions for troubleshooting), but I am now convinced that the basic recipe just doesn't work. Maybe it's because we are in Florida and it is more humid, but we have air conditioning!
I am actually relieved to see that other people have had the same issues... I haven't completely given up trying, as I will try and tweak the recipes to see if the results are better but I'm not holding my breath.

For people who are on a GFCF diet, be aware that not all the recipes are dairy free in the book.
Based on my experience with it, I would definitely not recommend that book.
I would advise you to get Delicious Gluten-Free Wheat-Free Breads by LynnRae Ries and Bruce Gross instead, which offers much more diversity and great tasting sweet and savory breads (some of them also with dairy) and recipes suitable both for bread machines and oven!

Summary: A must for Gluten-Free Bread Baking
Comment: Trust me on this: If you don't have a bread machine, buy a Zojirushi BBCCX20 Home Bakery Supreme Bread Machine, and combine the order with this book. You won't be sorry.

I put off buying a bread machine for ages because, as an avid baker, I didn't think I needed one, but my efforts at gluten-free bread baking began to wear me down. I bought more oven thermometers to make sure my oven was accurately baking the bread. I bought instant read thermometers to make sure my milk or water was at the correct temperature. I measured and weighed and measured again, but no matter my efforts and despite my experience level, my bread baking was inconsistent. Was it rising too fast? Did I need a cooler/warmer place for it to rise? Was I beating it too vigorously with my Kitchen Aid? or for too long? Was it too humid in the kitchen, or too dry? Nine months of bread baking and experimenting had almost broken me, but my daughter did not want to live the gluten-free diet bread-free, so I read reviews, ordered a Zojirushi Bread Machine and bought Gluten-Free Baking Classics for the Bread Machine.

One reviewer stated that one tenth of the book revolved around how to set the Zojirushi. Curious, because my copy of the book had only one page of detailed and easy-to-follow directions for programming the machine(p. 15). This programming ability is why the Zojirushi is so highly prized.

My results on the first loaf were very good, but sometimes I got lucky baking the old fashioned way, too. The second loaf was also great. Then I was three for three. Folks, Annalise G. Roberts has done the science and the math. She has given us the recipe for a perfect loaf of bread every time. I do not have to guess at anything anymore, and the bread machine provides a constant environment. There is no more guess work.

Now a word about the recipes. I have cookbooks that I keep on the shelf even though I make only one or two recipes from them. This is a slim volume, which I actually appreciate because I have room for it, but I guarantee I will make each and every recipe in it. I love that there are variations on the recipes, too, including seeds, fruits, nuts, and other whole grain flours. I have only baked a few recipes so far, because my family keeps requesting the Pecan Sandwich Bread.

It is trite to say this, but it is so true, do yourself a favor and buy this book. Yes, and buy the Zojirushi too. Just because you have to eat gluten-free doesn't mean you don't deserve consistently delicious bread.

Comment: THIS WAS MY FIRST GLUTEN FREE BREAD MACHINE BOOK. I HAVE THE ZOJIRUSHI MACHINE THAT SHE USES (ALTHOUGH NOT THE NEWEST MODEL THAT SHE TALKS ABOUT) AND EVEN WITH THE OLDER MODEL MACHINE ITS EASY TO FOLLOW THE DIRECTIONS. I THINK ALL BREAD MACHINES COULD DO THESE RECIPES. HOWEVER HER DIRECTIONS ARE SPECIFIC FOR THESE MACHINES. EASY TO FOLLOW AND LIGHT AND FLUFFY BREAD WHEN FINISHED.THE HOUSE SMELLS GREAT WHEN THESE ARE BAKING.I WOULD RECOMMEND THIS BOOK. I USE THIS ONE THE MOST OUT OF MY COLLECTIN BECAUSE IT IS SO SIMPLE.
