Summary: All science no practicality
Comment: I am beginning cheese maker and bought this book to help in the learning process. I had difficulty from the 1st recipe. I contacted the website and reached someone named 'Jim' via email. Repeatedly I was accused in subtle ways of not reading or following the recipe. When that didn't work, he accused my milk (which is milked by me daily) of being poor quality. He suggested I have the milk analyzed. He claims he was the most experienced cheese maker on hand but his emails screamed ignorance. This book was written of, for and by people who can approximate lab conditions and exact temperatures (at times you're asked to heat something 1 degree per minute for 20 minutes - my stove is not a computer). When you have a problem they can only accuse your milk, your reading or your intellect of error because it seems none of them have ever actually made cheese in a normal kitchen.

I found a mozzarella recipe on Carla Emery's website and used it with great success. It was simple and of, for and by someone in a kitchen.

If you really want to make cheese check out some of these books at the library and try before you buy, this book was not written for practical application by us at home.

Summary: The greatest cheese book!!
Comment: This book is awesome. It has all kinds of cheese from easy cheese to hard. It is very detailed. I have many cheese books and this is a must for your cookbook repertoire. I use it all the time. It is also nice that you can e-mail the author with question. The ingredient list is available on her website except milk but you can also buy from other supplier. I have a few books that are written so you have to buy from them only, no this one.

Comment: Just learning to make cheese- this book seems to have all the answers I have been looking for. Still working on soft cheeses but looking forward to getting supplies for all those great hard cheeses included in this book.

Comment: This book was the only one chosen for sale in the well known cheese supply store in Seattle. The owners praised it. I was pleased to find it at a lower price on Amazon! Easy to read format and easy to follow directions. Very informative.
