Customer Rating:      Summary: The best Vegetable Recipes Comment: This is a great book. It has not only recipes but other information on how to select, freeze, can, and cook so many vegetables. I have already made about 18 of the recipes and each one was very good. The authors took a lot of time testing various methods and it shows.
Customer Rating:      Summary: Lots of Breadth, Questionable Depth Comment: I love this book! I tend to cook my favorite veggies over and over. Besides, it's hard to buy something you don't know how to cook. Well, this book eliminates my fear of experimenting.
This book covers 53 vegetables. I can't even name 53 vegetables. I was tying to think of a supermarket veggie that's not in this book, but I couldn't come up with one. This book has the produce aisle covered.
Some of the recipes in here are repeats of the annuals and other CI books. You'll get that with any CI Best book. However, I like having a book that organizes everything by type of veggie, as opposed to having to hunt through the other books for veggie recipes.
This book departs a little from the CI format. There is no extensive background info for each recipe. There is a background section on each each veggie.
Here is my constructive criticism: some of the veggies have only one or two recipes! Lastly, I really would have liked this in a hardcover. With that said, I would still recommend this book to others.
Customer Rating:      Summary: Many of these recipes are found in other CI books Comment: I gave the book 4 stars because, although the recipes are excellent, many are re-hashed. I'm a CI fan and have 11 of their cookbooks and all the annuals since 2000. For those like me who have most of the other books, you may be disappointed that so many of these vegetable recipes are repeats. (Also note that this is a paperback and is slightly smaller in format than the hardbound CI cookbooks.) If your holdings are less extensive, buy the book.
Customer Rating:      Summary: Awesome Yams Comment: OK, I bought this book because I hate vegetables. I really REALLY don't like them, and I needed to like them. So here comes this book, and the first thing I make is baked yams. Oh man, I LOVED them! Then I tried the leeks. I'd never had leeks before, and had no idea how to cook them. They were amazing!
I love to read through the description of the process they took for each vegetable, trying to find the ideal way to cook them; I can see what I have tried and didn't work, WHY it didn't work, and what WILL work.
Not a lot of pictures in this book, but I have enjoyed everything I've tried.
