INTRODUCTION
Vietnam is a country of natural beauty with a coastline of sandy beaches stretching about 2000 miles (3225 km) from the northern to the southern tip of the South China Sea. Along the coast, fishing is the main livelihood. The majority of Vietnamese people are Kinh race people (87%) with the remaining of 53 different ethnic minority groups. For more than 2000 years, the country has been subjected to a near continuing series of foreign occupations from China, France, Japan, and America. One consequence of these occupations is the lasting influence on Vietnamese cuisine. Among Vietnamese dishes, perhaps the best known in the West is Pho, a noodle soup. Another is the deep-fried spring roll called Nern in the north, and Cha Goi in the south. Rice is a staple food used as a side dish, or a main dish when combined with other ingredients, such as beef, pork, chicken, or seafood. Vietnamese dishes consist of many different blends of herbs and spices. Most dishes are not fiery hot, nor greasy. Seafood and vegetarian dishes like An Chay are very popular. Today, Vietnamese cuisine is gaining increased international attention due to the fact that it is quite healthy.
This book is an introduction to a new generation for a delicious journey through Vietnamese cuisine. While the combination of flavors may seem experimental to some, they will result in a savory experience. Comment: I cook Vietnamese all the time but I got this book for dishes where I am not sure how to make. There are some shortcuts that I would have never thought to use. After trying it, it taste just as good and save me time.

Comment: The recipes in this book is pretty much basic vietnamese cooking. It is simple and easy to follow instructions. Great pictures that would leave you salivating and wanting to try the recipes.

Summary: I love this book
Comment: Giving pictures of the major ingriedients was very thoughtful. The recipes are pretty streamlined and easy but thats fine with me, I don't have any aspirations to be a chef. Personally I wouldn't go to the trouble of making my own soup stock like the author suggests when you can just buy the cubes, but I guess it just depends on how serios you are about cooking. So far the book has been easy to follow and the food produced has been delicious which is whats most important to me.

Summary: Pretty Decenttttt!
Comment: Of all six vietnamese cookbook, this came pretty decent. The pictures are great to prep for the food. I like the fact that you don't have to worry if you bought the wrong ingredients or not. I am glad I bought this one. Banh Xeo and Bun Rieu is pretty decent.

Summary: Short, Sweet, Simple..
Comment: I LOVE Andre's cookbook!

His recipes are pretty authentic and straightforward. He doesn't B.S. Highly recommended for beginners. For those who are experienced in Vietnamese cooking, I find this book useful as a quick reference for weekly meal planning. Like with any other cookbooks, the recipes serve only as a basis for basic ingredients. Alter the flavor according to your own liking (sweetness, tang, saltiness, etc..)
