Comment: Never have I had a cookbook that led to such a sudden increase in my cooking skills. No, I can't see reading it for pleasure, alone. No, I am not an "advanced" (or even intermediate) cook. I can turn out a decent meal, however, and cooked for myself, as a bachelor, for years.

But, in the couple of weeks since I got this book (concurrent with having to re-possess all kitchen duties and PRODUCE, thanks to newborn twins), I have learned a few really important skills from it that enabled me to turn out better meals. You can pick it up, look in the refrigerator, a figure out a relatively sophisticated meal. It is not simplistic, however, nor does it lead you to "shortcuts".

If you have you have attended some culinary institute or other, don't bother. But if you want to start on the road to better cooking, get this book. It does not pretend to be complete, but it throws out a bunch of good skills that enable one to put together a good meal with a much higher level of skill.

Comment: Peterson's book is illustrated with high quality color photograhs that show the reader exactly how to prepare a wide variety of meals using basic methods that professional chefs routinely use. This is not a cookbook per se; rather an excellent technique of cooking book for meats, fish and vegetables. Great book for a new or experienced cook.

Summary: The best "basic techniques" book on cooking
Comment: The Essentials is the best book on basic techniques I've found in 20 year of cooking for friends and family. It's my go to gift for nieces/nephews graduating from college and anyone else who wants to learn more about some of the things they've had at our house.
After this, you don't need a lot of other cook books - you can make your own recipes based on the techniques.

Comment: I expected a dinky little "used" paperback for six bucks! Instead I got this beautiful BIG ILLUSTRATED table bender. It's the perfect cookbook companion.

I made the best stew I ever tasted using the 2 cook books. [Cooking with the Culinary Art Institute] and this one.
